Recently, medias in Sherbrooke , asked this question: is Sherbrooke becoming a gastronomic destination in Quebec? Can the visibility of renowned chef Danny St-Pierre, owner of two restaurants in Sherbrooke and the proliferation of new cafes, bistros and restaurants in Sherbrooke attract Quebecois to discover the culinary delights of the Eastern Townships
? Broad question!
It is true that since I live in Sherbrooke, ie almost 16 months, many new restaurants have sprung up. And this is not to displease me! It is always with great pleasure that I discovered the news here.
I recently ate at the Combine, Sherbrooke new brewery located in the city center. The decor is modern and gross. The exposed stone walls alongside tables and chairs with modern design. It feels good at the Combine. What I love above all the large windows that allow the light to enter the room.
The dishes are served as decoration: both simple and original, simple but good . I tasted a butternut squash soup and maple very smooth and velvety. What a good idea maple syrup in the soup! I'll think about it at home. The whole was accompanied by a delicious ham quiche. It was chopped into pieces, somewhat reminiscent of smoked meat. The portions are very reasonable, I allowed myself a dessert: vanilla ice cream with balsamic sauce. It was delicious. As for the sauce, I had never tasted anything like it!
Prices are reasonable but may give slightly more generous portions. The service is not perfect. But I give them time to settle. After all, the team, as the place is brand new!
At the Combine, you can eat in the morning, afternoon or evening. You can also just go for a coffee on the spot or to take away or just a drink. I like the idea of all-day restaurant downtown that offers dishes without pretentious, but good for sure!
Their beer menu is very varied and I read there names of beers I still don’t known. I will have to go back!
