The best season for fondues is now here. With the cold settling faster than expected, it is less and less rare to be invited for a fondue party with friends. Since this is a true Quebec tradition, more and more restaurants offer this star dish on their menu and many even make it a specialty.
Fondue was popular in the 1970s, and every family had a set of fondue dishes on hand. This may be less the case today, in part because specialty restaurants are becoming more and more popular with each major city having at least one place to serve the year.
There are several variations of fondue. It can be cheese or meat and broths can vary according to the occasions. Meats, fish or seafood are usually accompanied by homemade sauces.
And for dessert? It will be either chocolate or caramel.
A fondue evening at the restaurant can be done in groups, with friends or simply as a couple. Most of these restaurants are of the "bring your own wine or beer" type.
In Quebec, the restaurant La Tyrolienne offers an experience worthy of Switzerland and the Autrice and we dive into this setting upon our arrival. The choices on the menu are varied and everyone can find it. Because of the reference to these two European countries, it is quite possible to decorate the whole sausages.
In Magog, a stop at Fondissimo is required after the day of skiing at Mont Orford. Nothing more comforting than being installed in this warm room and being advised by the courteous staff. Attention, it's open from Thursday to Sunday only!
In Laval, it's at the Foundry that amateurs have to go. Or maybe just a couple, Valentine's night for example. Also available is the tasting menu, which includes a filet mignon of beef, chicken, salmon, shrimp and scallops. The portions are just right and a wine list is available.
