The cuisine is guided by the seasons, therefore continually reinvented, and by a highly creative team, led by chef-owner Marc-André Jetté. Everything is prepared in front of you on a wood fire with quality products from the market.

For example, hot oysters with apples, potatoes with black truffles, a halibut collar with Habadou peppers, scallops from the Magdalen Islands with leeks, fresh pasta, duck breast from La Canardière with plums, guinea fowl stuffed with chanterelle or Gaspésie red tuna with shishito.

Ton Sushi
