Absolutely not closed to oyster!

Absolutely not closed to oyster!

To paraphrase the French poet Paul Eluard, who said "like an oyster that has found a pearl," Montreal would she found her "haven of choice" by hosting one of its first street oyster bars with Choice Harbour? Anyway, she's found the youngest owners in town this new type of business.

Snatowsky Marley and Max Ruiz-Laing have 24 years. They have a third partner, Edward Ruiz-Petel, the cousin of Max-old, he 26 years. For two years, the three young Montrealers are owners of Choice Harbour, a traveling oyster bar.

If you are ready to enjoy a minimum of 300 oysters, they will be home in less than two or almost! To this number then oyster, it is understood that the three acolytes enlignent more towards private events such as weddings or corporate parties that simple July BBQ to 8 or 10 people. "We offer a luxury service," said Max, leaning on the bar of Majestique St. Laurent Boulevard.

But what is it that three young people come to do so in the oyster industry? Not particularly passionate from Malpeque and Beauséjour, the idea came to the bar Max and Marley while they were traveling in the Maritimes. They took the opportunity to meet with homeowners and to become familiar with the world of the oyster. Having worked at the famous restaurant Jos Beef, Max did not see himself working in something he could not control. Young, maybe, but professional, guys! Upon their return, Edward, skilled carpenter, built their famous oyster bar!

Focus on freshness

No way for our three contractors to store boxes and boxes of oysters for their upcoming events. "It's clear we want the freshness," says loudly Ruiz-Laing. "Our oysters are given us by the Pec-Nord company and open to the customer within 24 hours of being ordered. Then serves them with a classic mignonette or house mignonette. "For restoenligne.com, he agreed to reveal his recipe: apple cider vinegar, white wine vinegar, apple juice, salt and pepper.

Their favorite oyster? The Chiasson. Following bottom of the culture in northern New Brunswick near Acadian islands of Lamèque and Miscou, that a reputable oyster for its firm flesh and sea taste this good finish. At 90%, that's Choice Harbour offered to its customers. However, if they have other wishes, nothing prevents the traveling oyster bar to meet their desires. If oysters account for 80% of its sales, Choice Harbour also offers those who wish, shrimp, clams and shell raw scallops came directly from the Îles-de-la-Madeleine.

Projects?

Two years later and pocket the first Québec Entrepreneurship Award 2012 in the food category, Max Ruiz looks at his career and that of his associates with satisfaction: "It runs great. We just wanted to do that! "The demand for this new service is there. So much so that they have contracts not only in the immediate area of Montreal, but also in the Hautes Laurentides like in Ste-Agathe. "We also went to open our oysters in vineyards in Ontario! "Max says proudly. Quebec is also in their sights. "You know, nothing keeps us except profitability," says one who just has shares in the Bar Majestique.

Who said already as noble souls the value is not the number of years?
