First, Pizza Salvatoré, this popular Quebec family business, announced a turnover exceeding $100 million, thanks to rapid growth which took it from 14 restaurants in 2018 to 73 locations in three provinces with 2600 employees today. This expansion has been accompanied by significant challenges, including constant adjustment to changes in a difficult economic environment in recent years. Élisabeth Abbatiello, VP of communications, highlighted the excitement of this growth while noting the adjustments needed to cope with constant change.
Next, the FISH restaurant now uses a controlled aging technique to mature its fish in a specially designed German refrigerator. This aging method, which can last up to 45 days, improves the texture and flavor of fish, giving a buttery taste to salmon and a truffle aroma to tuna.
Also, the restaurant now offers a “select take-out sushi club” concept. Customers fill out a taste questionnaire and chefs create a personalized menu based on their preferences.
Moreover, the company plans to open a branch in the Laurentians, but does not intend to become a restaurant chain, because it aims to change the sushi landscape in Quebec by offering a real profession to artisans from the kitchen.
Finally, the 11th edition of MTL à TABLE, the week where Montreal restaurants are highlighted, will be held from November 3 to 19, 2023. Food lovers will have the opportunity to taste delicious dishes during this event. Participating restaurants will offer tables d'hôte for dinner at fixed prices ranging from $38 to $83 for three or four courses. The menus for the 125 participating restaurants were recently revealed and reservations can be made on the event's official website.
