Quebec, January 30, 2021 - Ken Hall, General Manager of Fairmont Le Château Frontenac announces the departure of Stéphane Modat as Restaurant Chef at Fairmont Le Château Frontenac.
"It is with sadness, but also with great pride for the progress accomplished, that we announce Stéphane Modat's decision to leave his post at Fairmont Le Château Frontenac to take up new challenges. On behalf of the whole team, I would like to congratulate, but especially to thank Stéphane Modat for all the work accomplished. His fantastic energy, charisma and passion for local products will certainly be missed and we wish him the best of success in his future endeavors. As we begin the process of finding our next great chef, the Château's restaurants can always count on an experienced and seasoned culinary brigade who will continue to put the spotlight on the incredible producers of Quebec and local foods. As soon as he was hired at the hotel in 2013, Stéphane successfully managed the culinary transformation of restaurants and bars as part of the hotel’s major renovation project. Stéphane Modat's work has allowed the Château table to reach new heights of excellence and Stéphane Modat to push the limits of his creativity.
Thanks to his hard work at the Château and his voyages of discovery to the four corners of Quebec, Stéphane and his team have been able to put forward an exceptional Quebec culinary identity on the restaurant menu. During his professional career in this emblematic place that is the Champlain, Stéphane notably obtained the title of Chef of the Year 2019 at the Gala des Lauriers de la gastronomie du Québec and enabled the restaurant to win the “restaurateur 2020” award. Aliments du Québec au menu ”, two important awards that demonstrate his sustained interest in promoting Quebec gastronomy.
