It's time to take a quick look around and discover together the restaurants that have just opened their doors and that offer new concepts, new menus and new decor, where all the follies are allowed!
First, it is interesting to note that the airline Air Canada, via its enRoute magazine, unveiled the list of the 30 best new restaurants in Canada and that we find a grand total of 8 Quebec restaurants in this list alone.
Five are from Montreal, Pichai, Mokili, Mastard, J'ai Freng and Gia Vin & Grill, while two others are from Quebec, Restaurant Alentours and Le Clan. The youngest in the running comes from the Eastern Townships, more precisely from Austin, and is called Parcelles.

Here are a few other interesting new features to highlight, although these addresses are not on Air Canada's restricted list.
Bvrger (401, rue Notre-Dame Ouest, Montréal): The owner is the well-known restaurateur Christian Ventura who continues the momentum with vegan food by offering a vegan burger menu here.
Ikanos (112, rue McGill, Montreal): This is a concept imported from Australia when we age fish… and not meat. It was by wanting to avoid losses that the chef-owner Constant Mentzas found out about the existence of this technique on the other side of the world. The typical taste of maturation is much more subtle here than with meat. It is to be discovered!
Bloom Sushi Botanique (288 rue Sainte-Catherine Ouest, Montreal): A second address has just opened its doors, directly in the entertainment district, and still offers vegan sushi. In addition to offering choices without animal products, the leaders inculcate a culture of sustainable development within the walls of the establishment by promoting local products and compostable packaging while giving back to ecological causes.
Le Xavier (804 rue Saint François Xavier, Terrebonne): It is in the heart of Old Terrebonne, in a renovated building but keeping its unique character dating from 1804, that Le Xavier offers a festive menu and even rooms for its customers. Chef Jean-Philippe Darveau puts forward young, creative and surprising choices while his fellow sommelier Simon Di Battista is in charge of the wine list.
Le Bedeau (1100 rue Saint-Jean, Quebec): This is a wine bar that offers “sins of the land” as accompaniments. The owners are well-known craftsmen from the Old Capital and will offer a place with a warm atmosphere where it will be good to spend time with friends and learn about wine and cooking at the same time.
Ambre (4292, rue Saint-Félix, in Cap-Rouge): Usually, chefs are attached to a restaurant and decide to launch a food truck concept. But now with Ambre, Étienne Nadeau has done the opposite: after having been the chef of two food trucks, he is now opening his own establishment with a somewhat unusual but sought-after menu featuring local products and of the season.
