New restaurants across Quebec this summer

Brave entrepreneurs, despite the uncertainty related to the pandemic, nonetheless took their courage in both hands and decided to jump head first into the adventure of restoration! Let us introduce you to some of them, who have decided to open their restaurant.
First in Granby, the announcement of the closure of the famous song box Pub du village allowed two partners to create the "Boissonnerie", a place that will in a way continue the tradition of the bar, closed in April. last, to gather and feast. A seaside decor has been created and picnic tables will be placed on the terrace during the summer for 150 people to meet.
The former chef of the Auguste in Sherbrooke, Jean-Philippe Pelletier, will be in charge and will mainly prepare fish, shellfish and seafood to share. Steaks, lobster or burgers will also be on the menu.
In Quebec City, a few new adventurers are now awaiting the arrival of tourists to share their new cuisine.
This is the case of Le Clan, a project of Yanick Parent, owner of Bello, La Buche and Don Vegan, as well as Stéphane Modat, the former chef of Château Frontenac. These will offer dishes of local food, in a warm and relaxed atmosphere and promise gastronomy, but without pretension.
Also, Archibald will open a new branch in the tourist district, that of Petit Champlain.
Also in the old capital, a restaurant specializing in oysters will be opened and will be called Porcelaine. It’s not ceramic here, but a kind of mollusk! This will be an opportunity to have an aperitif and small bites of oysters, of different varieties, with several different toppings. The place will also offer a variety of beers, wines, ciders and cocktails.
Finally, Bo Cuisine d'Asie is the very last on the list for Quebec. Located in the Diamant theater, the restaurant will give pride of place to local products while associating it with Asian culture. For example, you can find Asian citrus fruits grown in greenhouses in Montreal, miso paste from North Hatley or seaweed from Gaspésie.
