INGREDIENTS
For ham frayed:
1 ham "picnic" of about 1 kilo
500ml. black beer
250ml. corn syrup
125ml. apple cider vinegar
2 bay leaves
2 cloves
Salt and pepper to taste
For Chutney Pineapple:
½ pineapple
1 chopped medium sized onion
1 red pepper, finely diced
250ml. maple syrup
250ml. white balsamic vinegar
Twenty coriander leaves
Salt and pepper to taste
PATH TO FOLLOW
For ham frayed:
1- Place all ingredients in a deep fried licks
2- Cover with foil and bake in preheated 200ºF about 12 hours
3- Remove the ham from its juice and shred with a fork
4- Book
For Chutney Pineapple:
1- In a pot, place the onions and corn syrup and simmer about 5 minutes
2. Deglaze with the vinegar
3- Add the pineapple and peppers
4- Reduce Dry
5- Add the coriander and season
6. Garnish generously our ham sandwich frayed and serve
