PREPARATION TIME: 20 MINUTES

INGREDIENTS

For eggs:

4 hard-boiled eggs, peeled
1 ripe lawyers Mexico
60 ml sour cream
60 ml mayonnaise
A few sprigs of coriander, roughly chopped
hot sauce, to taste
lime juice, to taste
Salt and pepper to taste
For the salsa house:

1 tomato, diced
½ red pepper, finely diced
¼ English cucumber cut into small dice
1 small red onion, diced
Salt and pepper, to taste
For the filling:

½ chorizo ??cut into small dice


PATH TO FOLLOW

For eggs:

Cut egg into two in the longitudinal direction.
Place the yolks in a bowl and reserve the whites.
In the bowl, add the flesh of the avocado, sour cream, mayonnaise, cilantro, hot sauce, lime juice, salt and pepper.
Using a potato masher, mash until smooth.
Fill each egg white with the mixture then refrigerate.
For the salsa house:

In a small bowl, place all the ingredients and mix.
Top with salsa and chorizo ??eggs and serve immediately.

NOTES

If you prepare this recipe in advance, just be sure to season your salsa at the last minute because the salt might disgorge your tomato. Basically, it would release a lot of water and your salsa become too liquid.
