Eric began his career as Head after its formation in institutional cooking Centre fomation Marie- Rivier Drummondville , where he met his sweetheart , Jinny Dufour. Some creams burned later, he left Quebec for an internship at the Auberge de Forest Sand Olone near Larochelle . He returned here to complete a degree in higher education cooking ITHQ . Fan of scalable kitchen and looking for original ideas , Eric returns do an internship at the renowned restaurant Le Choiseul, in the Val -de- Loire , recipient of two Michelin stars , where he honed his culinary techniques used him today ' hui to concoct its dishes based on local products .
