Open in the tourist district of Quebec, St-Jean Street, near City Hall, a new restaurant focused on local Quebec cuisine, this is the challenge that fall since June last Deschênes Jean and Carl Desruisseaux with complicity of Chief Simon Fortin.
Initially, these partners already working in two restaurants in Quebec, wanted to open an urban sugar shack. They had to change his mind almost at the last minute after learning of the imminent opening of such a place in the National Capital. The idea "to rethink the kitchen Grandma" then appeared as explained Jean Deschênes.
And this is where comes into play Simon Fortin. Formed by Normand Laprise, the Quebec leader gives a renewed air some classics of Quebec cuisine. The pie Grandma Claire made a place for deer alongside the beef and pork while Chinese pâté batinse is left with beef shredded roasted pepper, corn with Cajun spices Louisiana and mashed potatoes ground garlic.
At Batinse, the broad-bean soup simmers with marrow bones, besides having aromas of stout. Cod, salmon smoked with maple, duck, lobster club sandwich are also on the menu not to mention a crème brûlée with foie gras.
Side dessert, such as your father or your grandmother's apple pie on the island of Orleans and caramel Batinse way, an unemployed pudding with rhubarb or the revisited version of the famous pets-de-sister maple syrup, pecans and candied fruits, served with cream Gingerbread. Who says better ?
Finding out what makes the difference
It was nice being in a touristy area, Jean Deschênes notes with satisfaction that 60% of its customer base is made up of Quebecers. Good, because once the party cruise ships, we must continue to cook for his world! And it takes loyalty. Simon Fortin, this will be about 25% by changing the menu every season to keep the creative aspect of it. Retaining also by things that are not found anywhere else ...
This is the case with mixology. As it is trend, Batinse offer about 25 cocktails divided into two categories: aunts and Mononcles. A set of cocktails in which we find such bases with gin, rum, whiskey and cream Runner of the woods. Except for the big Rita: tequila, triple sec, Chambord, squeezed lime, rhubarb bitters, white cranberry juice. But beware, this drink is so huge, it takes two to get to enjoy it!
As for the atmosphere, two bathrooms venues: the background color, quieter, whereas at the entrance where old doors serve tables, surrounds an absolutely cozy bar.
In short, pulling into the gate of Batinse, the aromas of "the kitchen around here" in the words of the slogan of the house, have a little taste of come back to it!
