When the pizza becomes an art

When the pizza becomes an art

Journalists were invited to get to know Pizz'art the new premises of the Halles Ste-Foy, Quebec, close to Laval University. The movement was worth more than a visit.
Of refined pizza that combines freshness and flavor fusion in a mall? Strange, right? First, the Halles de Ste-Foy, as the name suggests, only lodge spaces dedicated to the purchase of food or food on the go. And second, as emphasized Julie Gagnon, co-owner of the second branch Pizz'art - the other is in Lac Beauport - "If I was just across the street, I'm not sure I would survive "alluding to the fierce competition that exists in the world of restaurants in the area of the Rue des Quatre-Bourgeois and Chemin Ste-Foy.
And changing section in the Halles, this will allow Julie Gagnon and his partner to offer their customers a terrace next summer.
A creative menu
As for the pizza, it is far from those served in large chain pizzerias. If there are three or four good pizza to more traditional ingredients like mozzarella, pepperoni, mushrooms, tomatoes, some downright innovate. This is the case with sweet goat (pesto, dried tomatoes, mozzarella, parmesan, goat cheese, pinion and ... apples!), The 'threesome' (mozzarella, cheddar, blue, walnuts, pickled onions , salt, arugula and vinaigrette) or the Savoy with his tomato sauce, the Emmenthal, its mozzarella, parmesan her, her onions, all complemented kirsch.
A menu section is reserved for even pizza from the imagination of chefs in Quebec. Space Heads we discover half a dozen pizzas created especially for Julie Gagnon by big names from the kitchen of the National Capital. This is how you can order 'soaring' the famous Jean Soulard (cream sauce, shredded meat, pickled onions, pickled tomatoes, cheese Origin '... Charlevoix and flambéed with Jack Daniel!). Or the Charlevoix David Forbes Heaven restaurant! (rosé sauce, roasted butternut squash, marinated mushrooms, cheese 1608, shallots and ham bio).
The Stones get involved
Is it because of the dough and sauces home or on the quality of cheeses used as Pizz'art reputation beyond the gates of Quebec? Still, that last summer, Julie Gagnon received a call asking him to prepare to serve his pizza to members of the Rolling Stones, their team and the airline staff who drove them, when they came to sing on the Plains of Abraham. His association with the Quebec City Summer Festival is probably not foreign to this reputation that led to Mick Jagger and his cronies.
The story does not say whether the British group also took one of three salads offered namely the goat cheese salad, apple and walnuts, samurai (greens, cashews, tomatoes, tangerines, Calabria, onions and lightly spiced homemade sauce ) or duck confit salad.
And since we are in a restaurant that does not do things by halves, the wall, each pizza is suggested with wine for perfect agreement.
Finally, anxious to meet the demands of their customers, Pizz'art owners also offer half-baked pizzas you'll end browning at home. That way, you'll feel your way to participate in this work of art that will become the slice of pizza on your plate!
