Several Quebec chefs have been fighting for years for certain amendments to the laws governing them. Finally, an important announcement will be made tomorrow: the Ministers of Environment and Tourism will allow some restaurants to serve wild meat.

Although they are more accessible, the full potential of regional products could be exploited much more. Chefs make a point of highlighting these local products, but they wanted to also use other products from our forests and lakes.

Because these products belong to the province and offer a unique taste, distinct identity of Quebec cuisine can’t be complete without the meat or the fish.

Moreover, the current Quebec tourism campaign puts forward a certain authenticity and originality... that rhymes exactly with the demands of chefs!

The pilot project will touch currently ten restaurants. According to what La Presse has learned, Au Pied de Cochon and Toqué! will be on the list.
