The owners of Sapristi and Les Trois Garçons restaurants are inaugurating Alphonse - Cuisine & Cocktail, an unpretentious upscale bistro with a chic and relaxed look. Located at the corner of Sainte-Anne and des Jardins streets, Alphonse comes to life in the historic building where the Desjardins caisse had housed since 1948.
In addition to accommodating 62 guests within its walls, Alphonse has an outdoor terrace with 30 seats as well as a charming interior courtyard with a dozen seats. The project required investments of more than $ 1.2 million.
A second life for the Caisse
The famous Alphonse Desjardins, founder of the Desjardins caisses populaires, leaves his mark in the new bistro from which he inspired the name. At the Alphonse, there are several restored antique furniture and objects from the heritage of the fund. Thus, the entrance doors are recycled in the bathrooms located in the old vault, the safe serves as an entrance table and the security lockers decorate the place.
Different raw materials come together in a unique artistic setting. Large windows illuminate the space covered with black and white ceramic floors. Behind the bar rises a shimmering copper wall topped with pennies. Solid walnut tables - sometimes covered with granite -, leather benches, wooden slatted ceilings and brick walls adorn the place in which new and old meet.
The desire to design an establishment that they themselves would like to frequent: this is what motivated the young restaurateurs Jean-Philippe Letellier and Julien Hamel. “The magnificent space left vacant by Desjardins was the spark plug for the creation of Alphonse. Like our other establishments, the new bistro has been designed to please Quebecers above all. Here, we feel good and we want to share a good meal or discover a new cocktail, "says Jean-Philippe Letellier, co-owner of Alphonse.
Cooking & Cocktail
Marc Babin, executive chef and co-owner of the group's restaurants, signs a gourmet menu based on local Quebec products. Pasta, fish, salads, meats, vegetarian and vegan dishes; everyone finds account at Alphonse! As for cocktails, a large selection of rums and spirits from here are featured. Eve Dickson, Director of Operations for Alphonse, joined the team to run the dining room.
