There are fearless entrepreneurs who fully believe in their chance to fizzle out with their restaurant project. This is the observation that we can make at present, when dozens of new establishments have opened their doors since the beginning of 2022... and it's not over. Here is a short list that might make your mouth water.

Quebec

In the old capital, more precisely in the St-Roch district, the Japanese tavern Hono Izakaya gave birth to Hono Ramen, in an adjacent premises. In this new establishment, noodles and homemade broths are in the spotlight. Four predetermined soups are offered and a variety of extra choices are available, such as meat and fish.

Pastry chef Catherine Méra, who currently operates her popular business in Baie-Saint-Paul, is planning a second counter on the Côte de la Fabrique. It offers pastries that are very rarely seen in Quebec and focuses on quality above all.

Another well-known personality in the restaurant world has made a comeback in Quebec City: Helena Loureiro now welcomes her clients at Restaurant Helena in the Gourmet District of QG Sainte-Foy. This Portuguese restaurant offers a whole experience, sometimes highlighting fish and seafood from the Îles-de-la-Madeline but also products coming directly from Portugal.

A brand new café will also open its doors in the Limoilou district and will offer original coffees, sandwiches, salads, pastries, pastries and possibly wine. The Kogi will be the new unifying neighborhood café where it will be possible to discuss projects and trips with friends.

Montreal, South Shore and North Shore

The Gon Bui resto-bar opened its doors on Boulevard du Carrefour and offers interesting choices of Cantonese specialty dishes. Its formula also suggests dishes that are easy to share, which makes it an ideal place to visit with friends.

At the Pilot Project (Rue Rachel est in Montreal), you will have the chance to taste the vegetables that grow on the roof of the establishment while enjoying a beer or spirits made on site.

During the lively brunches at Barranco (rue Saint-Denis in Montreal), you will do as the Peruvians of the Andes do: eat raw fish for lunch, a duck egg, an octopus in sauce on brioche bread or even a bagel with gravlax from trout.

In Old Montreal, Jellyfish's little brother, Pubjelly, has just opened its doors next door and offers a different but equally creative menu. Unlike Jellyfish, the atmosphere is less cozy, the menu is shorter and we rely heavily on dishes to share.

To the south, in Saint-Jean-sur-Richelieu, Fromagerie Victoria will open a 19th branch with its usual menu and its famous poutine.

Eastern Townships

First, in Bromont, a new branch of the Pizzeria N.900 chain will open its doors in premises left vacant due to the closure of another restaurant. The old restaurant offered French dishes while the new one will offer Italian dishes!

Nearby, in Granby, Shaker Cuisine et Mixologie has confirmed the arrival of its 15th branch. But before proceeding with its official opening, the owners must first give a facelift to the chosen building, which previously housed a Burger King, but which had been empty for three years.

Bas-St-Laurent

Leaving Quebec and heading towards Rimouski, via Highway 20, there was always a mandatory stop at the Halte snack bar, located precisely in Sainte-Anne-de-la-Pocatière. But now the team of Chez Mag, a famous canteen on Île d'Orléans, has just taken possession of the premises and plans to open a new branch there. Will we find their famous lobster poutine there?

Laurentians

By the end of March, fans of singer Marc Hervieux will be able to find him at his brand new café, the Café des bons vivants, in Ste-Adèle. This project, he had in mind for a long time but his many contracts prevented him from materializing it. The pandemic, however, has changed the situation in his case!

In the Lower Laurentians, Normand Laprise will open a branch of his Brasserie T! in Sainte-Therese. Refined cuisine awaits customers in a warm atmosphere. Two other Brasserie T!, little sister of the restaurant Toqué!, are also open in Montreal and Brossard.
