Often, to break the routine and change their way of life, restaurant chefs have to find new projects or new avenues to explore. Over the past few months, that's what happened to a few of them. We are now going to show you these new ideas and how they intend to introduce you to new flavors.
First, chef Arnaud Marchand, a former participant in the show Les Chefs!, 2010 edition, and co-owner of the restaurants Chez Boulay and les Botanistes, is launching a new formula with Le Bedeau. If the objective of Chez Boulay is to make discover the products of the boreal terroir and to the Botanists, to inform the customers on the vegetable kingdom, the Bedeau will develop its menu around the wine while proposing an education on the wine. The harmony between what will be served in the dish and the wine that will be poured into the cup will be very thorough.
Dishes will showcase international flavors and techniques while maximizing the use of local produce.
The establishment will have a storefront in Quebec City, rue Saint-Jean, a stone's throw from Chez Boulay.
Also, we have talked about it on a few occasions in recent months, Stéphane Modat, the one who has spent the last eight years behind the stove at Château Frontenac now invites his followers to the Clan. On the menu, Modat does not hesitate to introduce the Quebec terroir in its entirety in a six-course menu.
Let us recall that Modat, after his departure from the Château, spent his free time traveling around Quebec with his fishing rod or his hunting weapon and meeting several indigenous communities, learning along the way several culinary techniques that he puts into practice in the Clan.
Although it has only been open for nine months, the Clan has managed to crack the list of nominees for the Lauriers de la gastronomie québécoise gala: best restaurant of the year, chef of the year, influence of culinary culture and sommelier of the 'year. Only Pier-Alexis Soulière, sommelier, won the prize.
Finally, Guillaume St-Pierre, another former Les Chefs! and founder of Battuto, named restaurant of the year at the Lauriers 2022, launched a new restaurant with two acolytes, Charles Provencher-Proulx and Alexandra Roy: Le Melba. These longtime friends will offer French cuisine together, Charles and Alexandra having spent a lot of time in France to perfect their technique and their knowledge, in a 5 to 7 formula every evening of the week.
At Melba, it will be good to eat, drink and take your time. The menu will be accessible for all tastes and all wallets.
This new restaurant should open its doors during the month of July in the Saint-Sauveur district, in Quebec.
