The delivery car is filled with several topics to discuss today, including the popularity of sushi in North America, the possibility of finding cannabis dishes in restaurants, new recruits at the Estérel restaurant and the broken record by a branch of Mr. Puffs!

Let's start now with the publication of a study on the popularity of sushi in North America, carried out by the international gastronomic magazine Chef's Pencil. Researchers checked for sushi-related search trends and found that Vancouver has the highest volume.
Pretty hard to beat when you learn that there are over 600 specialty sushi restaurants in this BC city.

But in second place comes Montreal, which does not have to be ashamed of its performance against its other Canadian rival. For several years, restaurants have made this Japanese dish their specialty and the customer is served at all levels: high-end, chain, vegan, etc.

Let's continue with the news from Restaurants Canada which mentions being comfortable with the future offer of cannabis-based drinks in restaurants. It is the Ontario company Canopy

Growth which has developed a drink of the tea and herbal tea type and which offers to sell it to restaurateurs within a strictly regulated framework.

The pilot project is expected to be presented to the government shortly and the sale would initially be concentrated in designated controlled environments such as, among others, restaurants, bars and cafes.

For purists, rest assured: there is no question of seeing a section of the menu of your favorite restaurant dedicated entirely to cannabis dishes!

Let's take a look this time at the arrival of new recruits to the kitchen team at the Estérel. This well-known resort in the Laurentians has announced the promotion of Cédric St-Pierre as executive chef of its restaurant. Clément Hamy will replace him as head chef.

St-Pierre, who has been with the Estérel since 2019, promises to introduce surprising experiences that of course evolve according to the seasons and the harvests. Previously, he worked at the private club 357 c and at Europea.

Regarding Hamy, he settled in Quebec in 2017 after having undergone a ton of training in France. He favors an ecological, local and ethical approach in collaboration with local producers.

Finally, let's mention some happy news for the Mr Puffs branch located in Arvida, Saguenay. The restaurant, which describes itself as a dessert bar, which offers a variety of donuts and which opened its doors on January 25, has broken all the world records of the other branches of the chain.

Despite very cold temperatures during the first days of its opening, dozens of customers waited outside. Some still have not managed to taste the famous pastry.

The branch currently employs about thirty people. Given the enthusiasm, franchisees are still looking to fill certain positions.
