Over the past few days, other good news has touched the world of Quebec restaurants, starting with the awarding of a prize to Fromagerie Victoria, certification for Pizzéria NO.900 and the celebration of the 25th anniversary of the restaurant L'Intimiste located in Old Lévis.
Let's start with the Quebec competition Sélection Caseus, which wanted to discover the best cheese curds in the province. Their sights finally fell on Fromagerie Victoria, obviously well known for its cheese but also its family restaurant. Their cheese curds are made with 100% milk, which means there is no added powder or protein. Remember that the chain offers several ranges of cheese in its 20 restaurants throughout the province. This is the second time since 2018 that Fromagerie Victoria has won this award.
Let's continue with the Associazione Verace Pizza Napoletana (AVPN) certification, which was awarded to the NO.900 pizzeria chain and its 28 restaurants in Quebec. This is an international distinction given to restaurants that comply with all the rules of authenticity of Neapolitan pizza: ingredients with controlled denomination, 00 flour, controlled fermentation in time and temperature, a particular technique of lowering the dough, precise cooking time and duration, an oven set at a temperature of 900 degrees Fahrenheit. It is the first pizzeria in Quebec to receive it.
Let’s end with the anniversary of the restaurant L’Intimiste, which has a storefront in Old Lévis. The owner Martin Patry can be proud of the work accomplished since 1997 when he took possession of the premises of a former restaurant with about forty seats. In order to attract customers, the entrepreneur prepared a menu that could not be found anywhere else in town, quality classic French cuisine. But with the labor shortage, the restaurant is now only open three evenings a week and the owner himself has returned to lend a hand in the kitchen. Never mind, trends evolve, just like his menu, and Martin Patry wants to continue to receive his customers for another quarter of a century!
