My main takeaway outside of the excellent food, service and atmosphere, was that I am not sure how I've gotten this far in life without my towels smelling like balsam fir. Thanks for opening my eyes to the light.

Dining at La Tanière was an experience to say the least. The care and selection in highlighting all locally sourced ingredients from within the borders of Quebec was impeccable. Truly a wonderful experience and story behind the restaurant, the food and it's location. Getting to experience new ingredients and fruits that I had no idea even existed in Canada was a great surprise. The creativity involved in every dish that Chef François-Emmanuel presented was… chef's kiss. From the beginning with the variety of amuse bouches and accompanying aperitif, giving a wonderful sneak peak into what is yet to come to the very end with the assortment from their patisserie was very thoughtful. From start to finish, moving through the meal elevated the experience for me. Dining at the chef's counter gave an wonderful insight into the chefs creativity and cooking. I enjoyed watching the flow of the kitchen. Simon who was my CHO (Chief Hospitality Officer) provided excellent service in guiding me throughout the meal. His patience with my curiosity was well received and he provided great insights in regards to the ingredients and the story behind the pairings. I was very impressed with their signature dish: the rainbow trout cooked in clay, the cook and attention to detail was phenomenal. Each piece on the dish were so complimentary it was hard to put down. The wine pairings as well were very well curated. Each glass paired nicely with each dish. The best pairing of the night however was the caviar crème brulée with whiskey, although it was not a main entrée and was simply a palette cleanser. I know Simon saw some my dismay at the pairing but assured me that it would pair well, trust the process. And trust I did, while unconventional and I would not have thought to pair Whiskey with this, it was surprisingly mouth melting. The caramel flavour in the Whiskey really complimented sweetness of the crème brulée with the saltiness of the caviar. I found this was more thoughtful and flavourful as a course between dinner and the dessert. If I had to find a fault in the entire experience, I would have to say it might be the bread although it was still pretty good, but that has nothing to do with the experience or the meal, in my opinion it is just as a note aside. Never had I ever felt more proud to be Canadian than my experience dinning at La Tanière. I will be coming back again to see what else the chef can come up with next (especially in winter, even though I know he mentioned how much harder it is then with the limited ingredients). But I am very certain that his creativity will continue to impress.
Tanière³ lives up to its 2 Michelin star reputation! Every dish felt so carefully thought out, creative, beautifully presented, and of course delicious. Each course was fresh, seasonal, and deeply connected to the Canadian terroir. The service was just as impressive. Everyone was so attentive, warm, and knowledgeable. The setting made everything even more memorable. The restaurant is tucked into these historic underground stone rooms in Old Quebec, and getting to experience three different dining areas throughout the meal was such a cool touch. One of our favorite moments was the table-side sauce preparation with fresh local honeycomb straight from the apiary slat. And we also loved the caviar crème brûlée, unforgettable! Thank you to the entire team for such an incredible experience.
We do not usually pick fancy tasting menu spots with two young kids in tow, but last Friday evening at La Taniere felt like the right call and it absolutely delivered. The staff were so attentive and kind to our little ones, and nobody batted an eye when my daughter wanted to smell every dish before trying it. That foie gras course with the wild berry garnish was the kind of thing you keep talking about on the drive home. Honestly one of the best meals our family has had, and we cannot wait to come back for a special occasion.
Having lived in Quebec City for over a decade, La Tanière is the one place I keep coming back to when I want to remember why this city has such an incredible food culture. We went on a Tuesday evening last week and the dining room was calm and intimate, which honestly made the whole experience feel even more special. The venison dish they had on the tasting menu was stunning, with flavors that were complex without feeling fussy, and our server walked us through each course with genuine enthusiasm rather than the rehearsed script you get at a lot of fine dining spots. If you haven't been yet, clear your schedule and go - it's one of those rare meals you'll still be talking about months later.

Hands down one of the best meals I ever had. This was a sensational experience of trying Quebec ingredients. I also thought the non-alcoholic pairing was such a great accompaniment.
From start to finish, the food and service were exceptional as we moved through three vaulted rooms. Every dish was thoughtfully prepared, beautifully presented, explained in detail, and full of flavor. The wine pairings complemented each course perfectly. I usually prefer full-bodied reds, but after a Chardonnay pairing, I’ll be buying that bottle. The staff truly elevated the experience, attentive without being intrusive, knowledgeable about the menu, and genuinely welcoming. I left impressed, extremely satisfied, and will definitely return next time I’m in Quebec.

My husband and I visited your beautiful restaurant 3 years ago while on our honeymoon and I haven't stopped thinking about it since! I am currently in Québec City with my granddaughter, celebrating her graduation and had to bring her to experience the amazing food and hospitality that are second to none. She loved every single moment of our time with you! She is a true foodie and watches videos on meal tastings and Michelin star restaurants so, she was very excited about going to your restaurant. You surpassed all expectations in every way possible! The food was incredible, the wine pairings were perfect (this coming from someone who truly does not normally like wine), and the level of customer service and care from your amazing and friendly staff was unmatched! We are blessed to travel the world and to be able to try food from many countries. I am afraid that you have spoiled us for any other restaurant's tasting menus and I am not mad about it! We recently dined here and were initially impressed by the elegant ambience and well-presented dishes that reflected its Michelin-star reputation. However, we were very disappointed to find a hair strand in one of our mocktails. This was unexpected and concerning, as we had high expectations for food safety and hygiene at such a prestigious venue. The staff were courteous, but this incident affected our overall experience. We hope it was an isolated oversight and that stricter quality checks will be maintained moving forward.

I dined here on Wednesday, February 26th, and the experience transcended what one typically expects even from an exceptional restaurant. Each course demonstrated precision, creativity, and balance, engaging all the senses. Combining a refined atmosphere and impeccable service, the evening felt less like dinner and more like a carefully orchestrated culinary journey.
Best food experience ever!! Beautiful atmosphere, great service. We had the Chef's counter experience and it was amazing. The only tiny downside was that all the parties AT the Chef's counter did not start their experience at the same time, so staggered attendance led to multiple staff explaining different dishes to different parties at the same time, which made it more difficult to hear - especially when the staff are speaking different languages. Otherwise amazing and I'd recommend any one who can do this to PLEASE take part because you will not regret it. From the moment we got the text to enter a secret code to get in - we were completely taken aback by how wonderful it all was.

An experience. Everyone I spoke to said Tanière was about more than just the food. And they were right. It was the most complete dining experience I’ve had in North America. Exceptional cooking, thoughtful presentation, creative/local ingredients, warm hospitality, and a coherent story that ties everything together. The evening began enigmatically. I entered a door code, descended into what felt like an underground vault, and arrived at a speakeasy-style lounge. After a few small bites there, I was escorted into the main dining room (the chef’s counter). With the low light, heavy wood, and intimate setup, sitting at the counter felt like gathering for a secret meeting in a medieval chamber. One of the perks of the chef’s counter was the clear view into the kitchen, and more importantly, being served directly by chef-owner Nicol for several of the main courses. Food-wise, there wasn’t a single miss. Despite nearly 20 small bites and dishes, nothing felt repetitive in concept or flavor. I visited at a perfect time for Canadian seafood, with prime ingredients from the coasts and the St. Lawrence River like bluefin tuna and scallops. The dry-aged bluefin tuna may have been the best seafood dish I’ve ever had. Each bite was packed with deeply concentrated umami, enhanced by bright, fruity notes of plum and blackberry. What elevated it further was the non-alcoholic pairing, which echoed one of the dish’s core flavor notes and reinforced the overall composition rather than competing with it. This approach applied through the rest of the menu. The pairings consistently mirrored a central element of each dish, which added depth without sacrificing creativity or flavor. Dessert was also impeccable. The corn madeleine, corn cannoli, and popcorn reimagined one of Quebec’s most pedestrian crops into something playful yet refined. Among the dozens of Michelin-starred meals I had last year, this was undoubtedly in my top three. Would definitely be back to try their other seasonal tasting menu.
For now, is my best restaurant in my life that I tried! People who gave 1 star reviews, common guys just go Eat poutine next time!
