We decided to come to Projet Pilote after bailing the poutine line because it was so long. I’m so happy we did! When we arrived, we requested to be seated at the bar which was accommodated so kindly by Jeanne. When we were seated, we were greeted by Tim, the bartender. I was craving a dirty martini, and they happened to have one featured on their bar menu! It was a no-brainer and so deliciously made and elevated from a “regular” dirty martini. The spirits were fat washed in bacon fat which gave the drink a unique depth, but without overpowering smokiness. We also had the daiquiri which was absolutely incredible with rhum and the addition of green chartreuse. We will be thinking about it for a long time. We also got some bites to share: the asparagus, frites, salad, and Argentine chorizo. All more absolutely delicious and much more elevated and complex than the menu implied. We finished with a shot of Fernet with Tim :)! Definitely don’t miss out on Projet Pilote, especially if you love creative and delicious cocktails.

I went wirh some friends to celebrate my birthday and the team made sure we enjoyed ourselves. Jeanne, Elliott and Ben were very accommodating, made us feel comfortable and very welcome. This is definitely one of my favourite places in Montreal and the team makes the whole difference. S/o à une super équipe et une super ambiance...mercii!!

Delicious food and drinks. Menu seems to be seasonal, as I believe that the ingredients are locally grown/sourced. I appreciate the effort and time the owner took to explain us their concoctions. Had a great experience and will be back this summer when the doors are wide open I am seriously considering getting their merch. beautiful.
My fiancé and I had the BEST experience here. A+ food, service, and atmosphere! We were visiting Montreal from Boston and spontaneously chose Projet Pilote for dinner (based on the reviews!) while we were a few blocks away at Quai des Brumes, after enjoying a wonderful folk duo’s set. From the moment we walked in, it was such an enjoyable evening! We shared a fun laugh with the friendly host about how we speak English but we enjoy practicing French. Our server Ben was awesome! He made us feel so comfortable, like we were all friends right away! My cocktail, l’abricot melba, was unique in the best way. Our dishes, the striped bass and the Toulouse sausage, were both such delectable combinations of flavors. We appreciated the smaller portion sizes; it was the perfect amount of food! The sauces were so tasty that I joked to Ben I wanted something to soak up the leftover sauces on our plates and he offered to bring us bread. I said no thanks, but I actually should have said yes to the bread because the sauces were that good! We then made room for a mouthwatering chocolate mousse that we paired with a dessert wine. C’etait parfait!
