Taste is very personal, and while we respect your opinion, our food is intentionally crafted based on Vietnamese traditions as we know and serve them every day. Regarding the coffee: traditional Vietnamese coffee is made using strong espresso-quality beans, slowly dripped to create a bold and concentrated brew, often served with condensed milk. Our iced coffee follows this method and is meant to be intense rather than diluted. As for the pho and pricing: our pho is $21 before tax, which reflects the quality, time, and ingredients behind each bowl. Our chicken broth is cooked for over 12 hours using real bones, not powders or shortcuts. We use fresh noodles, a generous portion of meat, and fresh garnishes including green onions, white onions, and coriander. Each order is served with unlimited accompaniments of Thai basil, bean sprouts, fresh lime, and fresh chilies. We understand that not every flavor profile will suit everyone. Our intention is never to “westernize” Vietnamese food, but to serve our interpretation with care, transparency, and respect for our roots. Your visit happened during the first week back from vacation, and we had an unexpected issue with our bread supplier, our banh mi was not up to our usual standard, which we apologize for. Our chicken breast is carefully sourced and prepared, which some guests prefer for a lighter, leaner option, though we understand it may feel different from chicken thigh meat. That said, leaving a 2-star review without giving our staff a chance to address your concerns in person is disappointing. A quick word to our team would have allowed us to make things right immediately. We understand everyone has different tastes and expectations, but we always welcome constructive feedback directly.
