Can you please explain the pictures? I've prepared the scallops with care from thawing to searing. But the excess amount of water released into the pan prevented proper searing. They were literally boiling. After only a couple of minutes, the scallops shrank dramatically.

I just want to give you guys a shout out for a great product: Marinated Butterfly Shrimp Olivia I bought at Costco. The marinate is excellent. My family truly enjoyed it! Love that you are a local Quebec company! A bit less sodium would be nice, but overall a fantastic product! Thank you!
