A new venue, Freddy, at hotel william gray, proved excellent in every way. Matsui provided excellent service, along with anna and two others. We enjoyed immensely and wish Freddy a great future.

I visited Freddi on a Thursday night in early May with my fancy foodie friend Farzy… she loves a good expensive dinner and I’m always down to try a new restaurant. The interior has this dark, elegant atmosphere. Curved velvet chairs, marble tables, dim lighting… definitely the kind of place that makes you feel trendy and cool. Freddi is fusion Japanese with an izakaya-style menu built around sharing plates, which honestly made the whole experience more fun. We shared everything and ranked our favorites after every bite. Our server Ishmael was really warm and attentive throughout the night, which helped balance out the upscale atmosphere and made everything feel comfortable instead of intimidating. To drink, I ordered the Umekage cocktail with rhubarb tequila, plum liqueur, vermouth rouge, lime, and black balsamic vinegar. It was nicely balanced… fruity, slightly deep, and easy to sip slowly through dinner. One of the standout dishes for me was the Oscietra caviar and maguro toast with sea urchin butter. Definitely a splurge at $56… but honestly? It completely melted in your mouth. Rich, buttery, salty in the best way. We also shared the hamachi and maguro sashimi duo with maple ponzu vinaigrette and wasabi aioli. I personally preferred the lighter-colored sashimi because it tasted more delicate and buttery to me, but both were super fresh and beautifully prepared. The Connoisseur temaki hand rolls were probably my favorite part of the meal overall. The lobster and capers crumble hand roll immediately won me over… sooo good. The tuna sashimi with braised shiitake was a close second, followed by the hamachi sashimi with caviar. Freddi feels like a great dinner spot for a date night… share plates, sip cocktails slowly, and romanticize being in Montréal on a random Thursday night. I’m just a foodie and travel lover who enjoys trying new places and experiences and sharing them along the way. Loved the experience here for a happy hour. It’s a lovely restaurant. The appetizers was good, took the wagyu tartare, the signature temaki rolls (connoisseur) and the shiitake tempura! Our waiter David was so friendly and gave excellent food recommendations! Merciii David!

The miso-maple glazed black cod is one of the dish you should try ! The connoisseur is also great to start with as well! The service with Ismael and Matteo was great as well. Answered all our questions and went out of their way to accommodate us with honey for the Brussels sprouts.

We recently visited this new restaurant with high expectations, especially given its association with the William Gray, and chose it to celebrate our anniversary. While there are some strong elements, the overall experience felt like it still needs refinement. From the start, there was some confusion with seating. We had to request being moved to the bar, as the table we were initially given was apparently reserved for another couple who ended up arriving 1.5 hours later... despite the table sitting empty that entire time. It set the tone for what felt like an overwhelmed service throughout the evening. Menus also took quite a while to reach us. To their credit, the team offered us a glass of “champagne” to apologize, though it turned out to be prosecco; a small detail, but one that contributes to the overall impression. Food-wise, there were some highlights and some misses. The wagyu tartare was a generous portion, though the bone marrow element was difficult to discern. The cod was beautifully presented and well-portioned, but the miso-maple sauce was too watery, a spoon would have gone a long way in helping fully enjoy the dish. The maguro toast with caviar left us puzzled: the texture was very creamy but lacked depth and flavor. The connoisseur rolls were overall enjoyable, except for the tuna roll (tuna sashimi with braised shiitake), which felt confused and unbalanced in taste. The ambiance and music were great, but unfortunately the hospitality did not match. Despite celebrating a special occasion, we didn’t quite feel taken care of. While a dessert was kindly offered at the end, the overall experience felt rushed and lacking that attention to detail that elevates a dining experience. There is definitely potential here, and I’m confident things will improve with time. That said, for a restaurant of this caliber and backing, one would expect a more polished and seamless experience from the very beginning.

Beautiful restaurant with great food and drinks. The service was excellent, especially David, who gave thoughtful recommendations. We loved almost all dishes, particularly the yakitori duck breast and handrolls, though the wagyu tartare was a bit salty. Would definitely recommend this spot! Thanks David for the great service you and the rest of the team provided!! 🙏🏼

Absolutely fantastic experience! If you are looking for a handcraft cocktail with premium ingredients, this is the place! The reduce menu still offers a variety of flavors that will delight your night! A new "must" in the old port!

I had the opportunity to dine here last night and it was amazing. Even if our table was super tiny and in the corner, Leon made sure to make our experience the best as possible. he made sure every dish came slowly so that not everything would bombard our table and take all the place. Everything was super good

Great atmosphere and even better service! Best dishes: temakis (such interesting flavours), black cod (this is a must get), brussels sprouts (basic but they just really nailed it from texture to taste) Cocktails: I was so impressed by every single one of their drinks. Shioka (i don’t like olives nor blue cheese nor vodka, but this was such a trip!), Kanso (goes down sooo smooth), Aoba (sounds hardcore but was also very pleasant) Thank you to our server Ismael!

Delicious food and incredible cocktails! I definitely recommend the black cod and the temakis. Despite its location in hotel, the beautiful decor and layout makes the place feel cozy and comfortable.
