Quebec City, Wednesday, July 26, 2023 – Justine, a speakeasy bar and restaurant born during the pandemic and whose menu is inspired by the prohibition period, is coming out of the shadows to come to light this summer with the opening of its terrace. Located in the heart of Old Quebec on rue Saint-Paul, Justine was until very recently hidden behind a curtained window, not revealing what was hidden inside. For the past few days, the bar has been unveiled, now allowing its customers to enjoy the beautiful days in the sun, without however distorting the concept. A forbidden universe, inspired by the prohibition era of the 1920s with its underground bars, Justine is a real playground for owner Martin Vaillancourt, also at the head of the Le Corsaire pub and microbrewery as well as the Lore distillery. & Legends, and its team, allowing them to exploit unconventional products and return to old-fashioned catering by taking the time to meet customers. This concept is now being transported to the terrace, given the incessant demand, and the exceptional products offered there are now also available outside!

A RECURRING REQUEST

While Justine remained hidden for 2 years, this summer, the team wanted to please its customers by opening its own terrace, installed in the enchanting setting of the Old Port of Quebec. “We benefit from a good tourist clientele, especially in summer, and it was a request that came up constantly, so we thought why not please them! I find that the most important aspect is to listen to your customers, and that's what we did,” says Martin Vaillancourt, owner.

Able to accommodate 22 people outside, visitors will have the chance to taste a new summer menu, which is constantly evolving: the watchword for Justine's team is also to be creative and to have fun by offering a menu that inspires them, both in terms of cocktails and dishes. Distinguished by its products that go off the beaten path, in particular with cocktails inspired by old classic Prohibition recipes, revisited thanks to exceptional alcohols available today, and prepared with great care, Justine offers a special little touch that charms its customers every time.

A MENU ACCORDING TO THE MOOD

In addition to offering the most classic cocktails on the menu, Justine's talented bartenders often unleash their creativity to satisfy everyone's tastes. It is therefore not uncommon to be able to make a special request and receive a completely personalized cocktail. With a food menu that changes frequently, depending on the mood of the Marseille chef behind the stove, Justine is the place of choice to enjoy refined dishes to share. Although very changeable, the menu notably includes different tapas, all finely presented and concocted to offer an incomparable mouth-watering experience.
