The chef of the Toque! Restaurant in Montreal, Normand Laprise, was the guest speaker at the International Chefs Congress in New York. For the occasion, he praised several local products by preparing to nearly 2,000 people traditionnal “oreilles de Christ”.

Laprise arrived in the Big Apple with boxes of Quebec products, including pork, wild sorrel and local garlic. In addition, he taught American ways to dressed pork as he’s doing in Quebec.

He also talked about the tomato! Let do pasta, jelly, boil, or a cocktail dressing. In conclusion, he expressed his desire to see other chefs respecting more the product rather than making only plates.
