On Friday, January 23, 2015 opened the doors for the very first of the 4141 Boulevard of the Auvergne Neufchatel which grew in recent months a third Paillard under construction. Today, the kick was given and hot breads, decadent pastries, gourmet coffee and gourmet sandwiches (among others!) Have now taken up residence in this new and third address Paillard in Quebec City.

Signed by the firm of architectural and design Lemay Michaud, the new Café Bakery, which required considerable investment, over a hundred seats in a large open space Paillard dressed in the colors: white, black, cream and of course, the red! This third address will offer the same bakery counters, pastry and sandwich the two other branches in addition to providing a demonstration area in the heart of the dining room and a glass meeting room and a gelato counter in season .

Known for its fresh and exemplary products, Paillard is now an institution in the capital since its establishment in 2006 on Rue Saint-Jean. Since its creation, the 120 now employed by Paillard workers contribute every day to offer a wide selection of gourmet products still made the traditional way, which of course breads, croissants and pastries, the famous macaroons but also soups, meats, sauces, dressings and condiments that make up the succulent menu for a snack from the bakery. Over the years, Paillard also added to its manufacturing real gelato (typical Italian creation), chocolate (bar and soon the unit), homemade pizza, jams and all sorts of other products who know warm the hearts with the seasons.

Paillard is a creation of Mr. Yves Simard, who, after retiring in 1998 following an impressive career in business and restoration project has simmered Café Bakery grandiose for several years before finally unveil to the public Since 2006, he is at the helm of his bakeries with his wife, Rebecca Simard and Mr. Mario Gervais, the general manager. Paillard strives to create every day a multitude of fresh and tasty using the best techniques developed around the globe. "The bread which is the staple food, has always fascinated me. With the opening of this third Paillard in the region of Quebec, Mr. Simard was asked about his future plans for the expansion of the chain in Quebec and even abroad ... "We had a multitude of offers for Paillard open in Montreal, Toronto, New York, Cambridge (near Boston), even in Europe. We are very pleased to see the love and concern that people have for our product. But for now, only the opening of branches Paillard is scheduled for Quebec City. We are not yet ready to settle elsewhere or franchise our project. But everything is possible in the future. »

Yves Simard, owner of Café Boulangerie Paillard three is the one to whom we owe the opening of the first McDonald's restaurant in Quebec City on Hamel Boulevard 16 August 1977. Mr. Simard then will implement three other McDonald's in Quebec (including one located in the same area as the new Paillard, a sector that is very familiar) before any sale in 1998 to enjoy a well-deserved retirement ... to the continuation of this old dream in 2006! His bakery project has grown in 2012 while the second branch was opened at the Galeries de la Capitale and Mr. Simard still has work to do, for his third Boulangerie Paillard Café opened there only a few days in Neufchatel sector!
